Skiing

We are so excited that Dale got clearance to ski!! I have missed him skiing with me- but I won't lie. It has been nice not worrying about a babysitter. His neck is feeling better and next week we should find out if the fuse took and then it will just take some time to heal and be 100%. On Friday our friend Bubba invited us to be in a 4 man vertical challenge. All of the proceeds went to the Boy Scouts. It was such a blast. We made 12 runs in 3 hours. Saturday we took Rylee and Mason. It was Mason's first time this year. He did great and loved it!! We need at least one more BIG storm!!

Girls Night Out

Rylee and I decided we needed some girls time since Dale got to go to New Orleans to go to the Sugar Bowl. (GO UTES!!!)
We have been going skiing once or twice a week this winter. She loves it and she is getting SO GOOD!

My client, Brett, was the lion in The Wizard of Oz. So we planned a girls night to go see it. It was a blast. The girls loved it and now they all want to be in a play. There was 11 of us all together. What a fun girls night, we have to do it again.

Christmas

Beware: This is a long post. I didn't blog the month of December. We have been super busy this month. Dale had his neck fused, ski season began, my brother, Jared came into town, and Christmas. Life has been busy, but we have loved it.

Christmas Eve at Snowbasin. Santa rode down the mountain on a snowmobile. They had fireworks and a torchlight parade of skiers down the mountain. It was pretty fun. We went with my parents, my sister Brittany, and my brother Brandon and their famlies.

Rylee and Mason is their Christmas church clothes. I know I am biased, but they are sooo cute!


Does anyone notice that Dale is always taking the pictures. I try to get him in more pictures.
Our neighbors, the Larson's, had such a fun Christmas party. We played a game where everyone drew a name of someone at the party and then drew a picture of that person. You then had to guess who the drawings were of. It was a lot of fun, besides the fact that I looked like the Joker in my drawing!!! Thanks guys, it was super fun.
Every year my friends from high school get together for a Christams Party!!
Heather, Lea, Melanie, Paige, Jen, Chelsey, Me, Courtney, and Stacey. (Ann Marie hosted and she isn't in the picture... Sorry!) We played Rock Band. It was a blast!

Recipe for Chili's Enchilada Soup:
Ingredients:
1 TBS vegetable oil 1 lb of chicken breasts 1/2 c. diced onion
1 clove garlic, pressed 2 14.5 oz cans chicken broth 1 1/4 c. masa harina
3 c. water 1 10 oz can enchilada sauce 16 ounces Velveeta
1 tsp salt 3/4 tsp chili powder 1/2 tsp cumin
Directions:
1. Add vegetable oil to large pot over medium heat. Add chicken and brown 4-5 minutes per side.
2. Add onions and garlic to pot and saute over medium heat for about 2 minutes or until onions bgin to become translucent. Add chicken broth.
3. Combine Masa Harina with 2 cups of water in medium bowl and whisk until blended. Add Masa mixture to pot with onions, garlis, and broth.
4. Add 1 cup of water, enchilada sauce, cheese, and spice and brin to a boil.
5. Shred chicken into small pieces and add it to pot. Reduce heat and simmer soup for 30-40 minutes or until thick.
6. Garnish soup with cheese, pico de gallo, avocado, and tortilla strips.
(I usually cook my chicken in the crock pot all day, then shred it. It tastes good and is way easier, plus I worried about uncooked chicken. Enjoy!)













Gymnastics Recitals

Rylee and Mason have both been in gymnastics since August. They love it. Mason and I do a Mommy and me class while Rylee is in class. They each had a Christmas show where they could show what they have been working on.
Tada!!

So Mason liked his show, but not Rylee's! (P.S. Dale had surgery and they went through his neck, he hasn't become a priest! He is doing great.)

Go Utes!!

After the Utes game last Saturday, Dale and 2 of our neighbors sprayed red U's on about 6 of our neighbors' lawns that are BYU fans. So that no one would know it was them, they decided to spray their own lawns too. That plan backfired and they woke up to Blue U's and Y's. Boys will be boys!!!

Gourmet Girls + Twilight = FABULOUS!!

My friend Cindi started Gourmet Girls one year ago. We meet together once a month, bring a yummy dish that goes with our theme for the month and recipe cards for everyone. There are 11 of us. We eat, discuss our recipes, talk, and have a blast. It is the best night of the month. This month was game night. I made Avocado Egg Rolls. (They were so yummy). And to make it even better this month, went to the midnight show of Twilight afterwards. It was fabulous. Good food, good movie, and even better company. We had so much fun and I loved the movie!!! Thanks Cindi for starting Gourmet Girls and giving us all something to look forward to each month.

Trick or Treat

All of my family came over to our house for dinner and trick or treating on Halloween. I made homeade spudnuts and rootbeer. They were yummy but a lot of work.

Amy, Jill, and Cindi hosted a fabulous party. It was such a blast. Dale is Slash, I'm Cruella Deville, Rylee is Dorothy, and Mason is the Lion.

Every year we carve pumpkins with Dale's family. As you can see, it has become a religious ritual at our house. We absolutely love it. Everyone tries to find the best patterns. (I think we may have too much time on our hands.)
